A good butcher in So. Hiram (45 min from Portlan via Rte 25 West) is Paul Martin- 625-4173. He's on Durgintown Rd. and is a professional butcher by-day. $70 and he butchers it the way you want (sausage, burger, roasts, steaks, etc.) and even will cape your trophy for you for that same price.
He just butchered my 8 pointer (165. lbs) I shot on Wednesday in Porter. The cape has been sent to Gene Bahr (genebahr.com) in Sebago for a museaum quality mount to be created.
