The last wild duck I ate was black many years ago. My mother cooked them up for me - I was still in high school.
I thought they were pretty good actually.
One other time, I had some wild goose that was excellent. It was cooked in some kind of sauce and gravy. We ate it on biscuits with veggies to go with it.

Brent, sorry about my last 2 posts I must have been having a silly episode or something last night.

John, that sounds real good even though I haven't had duck, but I sure like most things with cream of mushroom soup. :wink:

I don't keep coffee in the house any more. I drink way too much of it if it sits in my kitchen. :wink:

I would think duck would be good in a stir fry... maybe??

I can't say a thing.........Tang's here in Houlton is so used to my face that I seat myself at my usual table........drop my coat in the booth......hit the buffet and the waitress doesn't have to ask me anything...just brings over a coke and lets me eat to my hearts content. I always leave a good tip...

We eat a mess of geese and I like them but most of the guys I hunt with don't. I make a BBQ goose that is to die for. I had some smoked snow geese not to long ago and that was good. I got a swan for the first time and that was some good eaten.

Tell me more about stuffing waterfowl with rice and then cooking in a browning bag. This sounds like it would be good.

Yes, geese is good and I talked with a guy from NC in Feb. about swans. He also said some people eat them. I would try one in a heartbeat. Nice website you have also.
